Step 1.
Finely chop the walnuts and pecans, finely zest the orange, and coarsely grate the carrots. Add them into a bowl with the chia seeds, oats and hemp seeds.
Step 2.
In a jug, whisk together the water and yoghurt until smooth, then stir in the juice of the orange. Season with a pinch of salt and honey to taste.
Step 3.
Pour the liquid mixture into the dry ingredients and mix well. Divide between jars or containers, cover, and chill for at least 4 hours or overnight, until the oats and chia have soaked up the liquid.
Step 4.
To make the seed topping, toast the mixed seeds and sesame seeds in a dry frying pan over a medium heat for 3–4 mins, or until golden and popping. Remove from the heat and stir in the mixed spice, a touch of salt, and honey. Spread onto a plate to cool, then store in an airtight container at room temperature.
Step 5.
When ready to serve, top each portion of muesli with a dollop of Greek yoghurt and a generous sprinkle of spiced seed crunch.
