Bibimbap is the perfect dish to make when you want to use up a bunch of leftovers or veg you have in the fridge. This bibimbap recipe is served with crispy rice and drizzled with a savoury, sweet, sour, slightly spicy sauce.

Nice, simple, flavoursome recipe! You can very easily mix it up with whatever veg/protein you like. I'm sad I forgot to take a photo, but will certainly be cooking this again 👌

I need to note that I messed this up in multiple ways. And yet this was still really delicious! I'm trying it again tomorrow (but making sure to pick up everything with the word sesame in, which I thought I had, and being braver with the gochujang) knowing I can smash it this time. The recipe isn't hard, I'm just not a natural cook - but this is pretty forgiving and you should give it a go. Even if your rice doesn't end up crispy, you're still gonna have a lovely time when it soaks up that sauce. I added some deep fried tofu to mine (I love our corner shop) and if you're someone that wants to bulk out a meal, it's a good shout. And I used pak choi instead of spinach and again, that worked really nicely.
