Step 1.
Mash up the bananas in a large bowl. Add the non-dairy milk, maple syrup, plain flour, cinnamon/vanilla and a big pinch of salt. Mix together. Tip the cornflakes out onto a plate.
Step 2.
Get a large non-stick frying pan over a medium heat, drizzle in a little oil. In two batches dunk the bread into the banana mixture until it is well soaked, then whip it out onto the plate of cornflakes, patting the cornflakes onto both sides. Fry the toasts for around 2 minutes on each side until crisp and golden. Add a little more oil to your pan before frying the next lot.
Step 3.
Divide the French toast between plates, drizzle with a little more maple syrup and pile on your choice of toppings.
