Step 1.
Preheat the oven to 200°C.
Step 2.
Rub your sweet potatoes with oil and salt and slide into the oven for 60 mins or until baked and tender all the way through. You can also pop them in the microwave for 5-6 minutes to give them a head start before finishing in the oven for 15 mins with the same oil and salt.
Step 3.
Warm up the ragù and finely chop the chillies and coriander.
Step 4.
Split open the sweet potatoes and stuff with ragu. Top with chillies and coriander. Serve with half a lime for squeezing.
