Step 1.
Finely chop the shallot and crush the garlic. Add a splash of oil to a large pan, then tip in the onions and garlic. Gently sauté until golden, then add the drained artichoke hearts and butter beans with their liquid.
Step 2.
If using, toss in the rosemary or any other herbs and simmer for 5 mins or until the liquid becomes a thick sauce.
Step 3.
Taste and adjust the seasoning before turning off the heat and squeezing over the lemon juice.
Step 4.
Serve with your favourite toast and an extra drizzle of olive oil.
