This is The Thai-Inspired One – a meticulously crafted meal plan of recipes that we’ve made to try and encapsulates the rich, spicy, and aromatic essence of Thai cuisine. It’s not an authentic meal plan by any means, but we hope we can give you a taste of some of the most-used Thai ingredients and flavour combinations.
We’re kicking things off with a Ponzu Soba Salad — a refreshing dish that’s built on a base of Japanese soba noodles, vibrant vegetables, and topped off with the delicate crunch of crispy salmon skin. Drizzled with a citrussy ponzu dressing, this salad strikes the perfect balance between umami and acidity, giving your tongue a pleasant little jolt with every bite. This is one of those healthy recipes that’ll make you feel good after eating it. I know that sounds a little insufferable but it’s true.
Next on our Thai-inspired trip, we’ve smoky Thai Grilled Chicken Thighs. Marinated in a tantalizing blend of lemongrass, ginger, and an array of spices, these chicken thighs are bursting with flavour. Grilling them to give them a nice, crispy exterior while the meat remains tender and juicy within is the key. Serving it with a roasted rice sauce inspired by nam jim jaew is a non-negotiable.
Finally, for the grand finale we’ve got a Spicy Tuna Larb, a riff on the larb (a traditional Thai salad) which uses tinned tuna instead to make it a bit more affordable and accessible. Infused with Thai chili, lime, and fresh herbs, this dish packs a punch.
