The Balanced Vegetarian One

We've lots of nutritious ingredients packed in this week's meal plan. It's a mixture of fresh, seasonal ingredients and a handful of store cupboard staples that you probably need to use. You know that jar of coconut milk you've been saving for that special occasion? It's time.

Ingredients

Makes 3 dinners, each serving 4

Mixed seeds are used in all the recipes adding a boost of extra good fats and fibre. We’ve got bitter chicory used in a fresh salad, balanced with sweet pears, tangy salty feta, and homemade croutons. There's a killer halloumi dish for the salty cheese fans out there. And, lastly, we've got a spiced coconut rice traybake with sweet potatoes and coriander.

1 Bulb of Garlic
4 Pears
8 Heads of Chicory (I Get A Mix of Red And White)
3 Blocks of Halloumi
200g Feta
6 x Pouches of Brown Rice
400g Packet of Flatbreads or Naan
2 Tbsp Coriander Seeds
100g Mixed Seeds
2 Tbsp Cumin Seeds
8-10cm Chunk of Ginger
4 Sweet Potatoes
Large Bunch of Coriander (100g)
Large Bunch of Parsley (100g)
400ml Coconut Milk
4 Lemons
