Does it matter whether you use quick cook polenta or normal polenta?

Hi Lucy. Use normal polenta for this one – using quick cook polenta will change the texture of the cake. If you're struggling to find regular polenta, a better substitution would be fine cornmeal. Enjoy!

Really great cake busy getting eaten. Might need a longer cooking time eg 1 hour depending on your oven.
