Tommi rose to fame after winning MasterChef in 2005. Today she’s known for Mexican chain restaurant Wahaca. Tommi was 18 and travelling around Mexico when the bold and fresh flavours of Mexico started her love of cooking. Years later, she went back to Mexico to learn more about the cooking techniques and ingredients and brought her knowledge back to the UK. This was the start of the now national chain of Mexican street food-style restaurants.
Since day one, Tommi has been keen to make sure Wahaca is a sustainable business. From building materials to food sourcing to food waste, there’s a massive focus on making Wahaca environmentally friendly. Recently, they’ve also started changing the menu each season to prevent over-farming.
When Tommi came to the studio she wanted to show how easy it is to swap out meat, yet still provide an immense amount of flavour. One of the absolute best things about this dish is the Mojo de Ajo - a spicy garlicky salsa. That as well as the grilled cheese - sensational.
