We made fish tacos last week, which meant we needed tortillas. You can buy ready-made versions from the supermarket — those giant, doughy wheels also found in those ubiquitous fajita kits — but we decided to make our own.
As it turns out, making tortillas from scratch is ridiculously easy and very therapeutic. The result is much tastier than anything you can buy in a shop, and it requires only three ingredients, two of which are water and salt. The other is masa harina flour, which isn’t available in most supermarkets, but which you can buy from Amazon for a few pounds.
