Presenting the ultimate plant-based Thai food street vendor: Greedy Khao. When Faai came over to the UK from Bangkok she met Lee and introduced him to the incredible flavours of Thai dishes. Lee had previously not been too keen on Thai food, but he was sold on the Thai food Faai was making, and Greedy Khao was born soon after. After about six months of setting up shop, Greedy Khao decided to go completely plant-based.
Their bestseller is their Plant-Based Pad Krapow. Fun fact - pad means stir fry and krapow is Thai basil. The most impressive part of this dish is the fried egg. Faai spent a lot of time perfecting this recipe and in particular the egg. Every ‘egg’ is made to order. To make it she blends tofu and rice flour and spreads it on to tofu skin to create the white. The yolk is made with puréed vegetables. Sublime.
The egg is fried and put on top of the stir fry, which consists of soy mince and mushrooms with birds-eye chillies and, most importantly, Thai basil. It’s an incredible dish that brings out the best of Thai flavours. Go check them out MOB.
