Victoria is the chef and recipe developer at Crepes and Cones, a Croydon restaurant founded by the rap duo Krept and Konan. Crepes and Cones serve up incredible desserts, most of which were created by Victoria, and soul food classics like wings and, of course, chicken and waffles.
When Victoria came to the studio she wanted to show the MOB how to make chicken and waffles with a twist. She’s obsessed with chicken and waffles and alongside the Henney Honey Prawns it’s her favourite dish at Crepes and Cones.
The twist in Victoria’s recipe comes from adding sweet potato and plantain to the waffle batter. Victoria is from Nigeria where plantain is a staple ingredient in all cooking. In this recipe the ripe plantain and sweet potato add sweet starchyness to the batter. The batter is finished off with flour, earthy cinnamon and vanilla essence. Delicious.
The chicken thighs get seasoned with paprika, onion salt and cayenne pepper. They’re then dredged in spiced flour, milk and the flour again. The flour and milk give an amazing texture and get in all the nooks and crannies of the chicken thigh ensuring absolute crispiness.
Fry off the chicken and add the waffle batter to your waffle maker. Waffle makers can vary quite a lot, so keep an eye on it and take it out when it's golden brown. Put the waffle on a plate and top with the fried chicken. Do as Victoria says and add loads of golden syrup over the top and a sprinkling of icing sugar. Sweet, savoury and out of this world.
