Step 1.
Start by making the patties. Coarsely grate the shallot into a bowl then add the mayonnaise and Worcestershire sauce and mix to combine. Add the turkey mince and season with plenty of salt and pepper then give it a good mix until you have a fully incorporated mixture.
Step 2.
Use your hands to divide the mixture into 4 even-sized patties, about 1cm thick. Transfer the patties to a plate.
Step 3.
For the burger sauce, combine the mayonnaise, ketchup, mustard and hot sauce in a small bowl. Season to taste with a touch of pickle brine, then set aside.
Step 4.
To cook the patties, heat a large frying pan over medium heat. Once hot, add a drizzle of olive oil then place the patties in. Cook for about 8-10 mins, flipping halfway through, or until cooked through and golden brown on both sides.
Step 5.
Transfer the patties to a plate then pop a slice of cheese on top of each one, cover with a lid and leave to rest for a couple of minutes until the cheese has melted.
Step 6.
Meanwhile, toast the burger buns in the same frying pan set over a medium heat. Slice the dill pickles to your desired thickness.
Step 7.
To build the burger, spread a dollop of burger sauce onto the cut sides of the buns. Top with a few lettuce leaves, the turkey patty, a few pickles and finally the bun top.
