Inspired by the flavours you find in a Thai laab, I've combined a sweet and sour dressing with crispy juicy chicken thighs to create a fresh, vibrant and umami chicken dinner.

This was really delicious and will be on my regular rotation. One tweak I did make was to pimp out the jasmine rice. I used a 400ml can of coconut milk, plus 300ml water, a tablespoon of sugar, half a teaspoon of salt and a teaspoon of turmeric. Added a lovely layer of richness to the rice and paired perfectly with the zingy dressing.
