Delicious! Had some trouble crisping up the rösti, I think it might have helped to squeeze some moisture out before putting it in the oven. But I’m already looking forward to making it again

This was delicious and surprisingly easy. I made it for lunch while working from home. The Rostis took less than 5 minutes to pull together, then I left them in the oven and finished the avocado, eggs and plating in 10 minutes at the end.
