This was absolutely delicious. The only change I would make next time is coating my eggplant in cornflour so I can get it extra crispy. Thank you for a smashing recipe!

Tried this last night and found 10 garlic gloves way too much. It overpowered everything else entirely. If make again but with half the garlic.

The ingredients says cashew with no amount and it's not mentioned in the recipe. Loved the dish though!

I have not met a Christina Soteriou recipe I did not like and this one is no exception! It has all the usual cupboard suspects but tastes like so much more than just a cupboard staple. Definitely a not-so-standard standard staple on our menu.
