Spaghetti Alla Nerano
A favourite from the bay of Nerano, this is a perfect example of making simple ingredients shine. Traditionally this pasta is made with Provolone del Monaco, but it’s hard to find outside of the region. The best alternative is an equal mix of Parmesan and pecorino.

This is insane! I've done a leave for hours version and a rushed version. Both great, but it's worth leaving those courgettes to marry each other overnight.

Certainly not 25min dish if you’re frying your courgettes as well. A lovely, subtle-ish flavoured but kinda classy dish, my wife and I loved it, our 5yo not so much! Quite rich yes, would be a good one for a dinner party perhaps.
