Roasted Brussels Sprouts with Chestnut Crumble & Smoked Bacon

Step 1.
Preheat the oven to 200°C / 400°F. Halve the sprouts, finely chop the chestnuts, dice the bacon, and chop the fresh parsley.
Step 2.
Toss the sprouts with ½ the olive oil and season with salt and black pepper. Spread on a baking sheet and roast for 20-25 mins, until crispy and browned.
Step 3.
In a pan, cook the bacon until crispy. Drain on paper towels.
Step 4.
In the same pan, add the remaining olive oil, chestnuts and breadcrumbs. Cook until the breadcrumbs are golden brown. Stir in parsley and season with salt and pepper.
Step 5.
Toss the roasted sprouts with the chestnut crumble and crispy bacon. Serve hot and enjoy!
