Make this quite regularly for lunch! I chuck in whatever veg I need to use up (peppers, courgette etc) and sometimes fry thinly sliced potatoes with the onions to make it more filling. Lasts well in the fridge so can do for a few lunches, it's super tasty and nice and healthy!
