Lovely pretty quick midweek supper. I added ground cumin coriander tumeric spices and star anise. Will make this again.

Pro tip - fry the halloumi separately while the other vegetables are cooking.

I've made this recipe about 3 or 4 times now and it's very tasty!! The halloumi never browns for me either - you could perhaps add it in earlier or fry it in another pan to achieve this.

I agree with Fiona, the haloumi didn't brown because there was too much liquid. I really enjoyed the recipe though.

Hi Fiona! Often the halloumi will produce a lot of water but then it evaporates allowing the cheese to turn golden :) if you just keep going you will get the lovely golden halloumi like in the video - hope that helps! X
