Halloumi Con Tomate With Seedy Drizzle
We love pan con tomate so I’ve taken inspo from that and made a whole meal out of it. Golden halloumi, in a fresh tomato sauce with a seedy herby drizzle.

I love this recipe, the flavours are so delicious! Although I definitely find myself making extra as the sauce does reduce down quite a lot.

It was tasty, but considering this is a recipe to feed four, the portion size is very small! Next time I’ll serve it with a side of giant couscous / quinoa / lentils.

Looks delicious and will definitely give it a go. Would love more recipes which are "Cook Now Dine Later" type (a very old recipe book) ie prepare food in advance and then when guests arrive, you are all set or merely take it out of oven!
A heading called "Get Ahead" or "All Set" with Mob would be so helpful. Know lots of friends feel the same.
