We love this one in our house!! Since I am watching my cholesterol and fats, I made a few tweaks that turned out very successfully: instead of double cream and whole milk, I blended in 8.75 oz of silken tofu and 8.75 oz of unsweetened unflavored oat milk. (Protein-heads, I imagine blending in cottage cheese would be excellent as well.) My partner was amazed that there was practically no perceptible difference! I also added sauteed bell peppers and spinach to the sauce, and made it with cauliflower gnocchi from Trader Joe's in the US. I cut back on the chorizo a bit, and cooked up an Italian herbed chicken breast to top it all off and up the protein as well.

I've made this several times, however I'm not a fan of gnocchi so I just make it woth regular pasta. The charred corn makes this next level!

Try, frying the gnocchi instead of just cooking in water. It makes a big difference to the whole dish.
