A simple and delicious carrot and coriander soup recipe that'll give any other carrot and coriander soup a run for its money. The secret is roasting your veg until it's nice and caramelised.

It was good. I didn’t use coriander as it tastes like soap. But I found it lacked depth and also it was a bit too watery for my liking.

This soup is now a staple in my monthly rotation. The feta was the perfect touch, I also blended in cooked red lentils for some added nutrition.
