    I've tried making cacio e Pepe a few times and it the cheese always stays a bit lumpy oh well! I didn't realise I needed so much potato starch so I used around 150g of cornflour and the test of plain flour and it turned out fine. The sauce is tasty but I found the noodles needed seasoning, either the dough or perhaps cooking them in salted water would have helped. I will add some salt to the dough next time I make it

    Great fun to make, but I had to add an egg to get the dough to stick together
